Yay! My first real post on my new blog. I figured I would start with something simple and fun, recipes are always good… So lets start! It’s spring time, and that means it’s almost summer time!
I am pretty much in love with the summer and one thing that stirs up memories of summer is Watermelon. As a child I have fond memories of eating/drinking Slurpee’s from 7-11. So there it is… Slurpee’s… Watermelon= SUMMER!
You could only imagine my excitement when I found a recipe for Cantaloupe Slush (essentially a healthy cantaloupe slurpee) in Dr. Fuhrman’s book “Eat to Live”. I figured, if this is good with cantaloupe it could be as good or better with watermelon… I was right! One of the most easy, refreshing and simple recipes to make on a hot summer day.
2 Cups Watermelon (or 1/2 cantaloupe if that is your melon of choice) spooned or cubed ( it’s going into a blender so I would not worry about this being beautiful)
2 Cups Ice
5-6 Pitted soft dates
Place all ingredients in a high-speed blender… We use the Blendtec and blend until smooth (don’t blend too much because it may melt the ice).
Pour into Margarita glasses (makes it more exciting 😉 ) and enjoy!
So Delicious! You can use less dates if you are going for lower sugar, I have done this before without the dates even and just added
a little raw honey. What is your favorite refreshing summer treat?
